At Viuda de Vacas, for over 100 years, we have been dedicated to preparing traditional market cuisine using fresh seasonal ingredients to create dishes with popular origins.

Starting with dishes from the traditional Madrid and Segovia culinary heritage of our family, such as Madrid-style tripe, chicken in pepitoria sauce, oxtail, and La Granja-style large white beans, we have expanded our menu throughout our history to include influences from all over the Iberian Peninsula: Andalusian gazpachos and salmorejos, Portuguese Bacalao à Bras, Galician-style octopus, and Asturian fabes with clams.

Our menu is complemented by Murcian rice dishes and a selection of meats and fish, making it nearly impossible for anyone who visits us not to become a regular customer.
